Fridays from Home


I know that everyone is not a fan of Halloween, but I, for one, am.  Sure, there are annoying things about most holidays (like teenagers sans costume banging on your door after 9pm), but anything that gives my kids this kind of joy has to be great.

We celebrate Halloween for the full month of October by going to pumpkin farms, baking cookies, decorating the house and reading spooky stories.  Nothing compares to the big event, though, when family and friends come over to trick-or-treat in the neighborhood and then warm up with a hot bowl of chili.  Nothing compliments chili better than corn muffins laced with bacon (recipe below)!

Sea Island Corn Muffins


1/8 cup Milk
1 1/3 cup Sugar
1 1/2 tsp Salt
2 1/2 cups Bread Flour
1 1/2 tb Baking Powder
1 cup Corn Meal 1 cup
2/3 cup Water 2/3 cup

1 cup Cream Corn 1 Cup
1/2 cup Vegetable Oil
1/2 cup Bacon Pieces
1 cup Shredded Cheddar Cheese


Combine sugar, salt, bread flour, baking powder, corn meal together. Combine the eggs, milk, oil, and water and slowly add to the dry ingredients. Scrape the bowl after adding all of the liquid and mix again to make sure there are no chunks. Add the cream corn and combine. Add the bacon and cheese and mix together. Bake at 375 in muffin pans until toothpick comes out clean about 15 min. Will make 24 regular size muffins.
